    Don’t Talk To Me Until I’ve Had My Strega

    Bafflingly so, the Espresso Martini continues it’s years long trend of popularity. I get it, it’s easy to drink, tastes like a mocha (kinda), and it has booze. But really, I think any cocktail nerd knows the Espresso Martini is a bit basic. First of all your base is Vodka… so like, what’s the point in that?

    Hence, the Don’t Talk To Me Until I’ve Had My Strega cocktail. Starting with the basic idea of the Chartreuse Cappuccino, I took it out of the cafe format and into the bar, if you will. There’s of ton of complexity in this drink, you get a lot of coffee upfront, which gives way to a ton of herbal complexity with the three different liquors we have going on. All of that is supported by the bourbon, giving the drink the right heat and backbone. The drink finishes refreshing and minty and lingers on the palate. This is easily one of my favorite coffee cocktails.

    The Holy Trinity Cocktail

    This drink was born from my love for a Tequila Old Fashioned, my personal favorite of the ‘fashions.

    Clearly, I had to come up with some sort of twist. I knew that I wanted to work with dried chiles, and the first dish to come to mind was Mole Negro. Mole is a deeply spiced, earthy, fruity, and savory salsa that pairs exceptionally well with chicken. It uses a base of three dried chiles (known as the holy trinity) and a large variety of spices, cacao, citrus to create one of the deepest and most complex flavor profiles in a dish.

  • The Holidays are Weird

    I’ve always been fairly indifferent towards the holidays, the veneer of American Capitalism was abundant, opaque; there was no magic here. Yes we talk about togetherness, or family, but primarily things are centered around this magical man bringing presents to the family. My sister and I realized fairly early that Santa wasn’t real, so we would figure out what our presents were by snooping in the closet.

    I don’t know how many years my parents and I (a child) perpetuated this illusion. Pretending we were dumb so my parents could continue to pretend. I suppose it continues today when I get a card with some money inside. It doesn’t matter much when you don’t talk to me in over six months.

    I have neglectful parents, and that is the pain I carry with me. The holidays amplify it, no matter what I try to do. And I’m sure the pain that you carry is amplified as well. The holidays are weird, and maybe that’s all I’m trying to say.

  • Caicedo Presents: Caicedo, January 24th, 2026

    As we head into the new year, Caicedo has been putting a lot of work into writing and preparing for our second full-length record. A little over a year ago we released our debut, Pasará and have been overwhelmed with the response and support we’ve received, both from fans and other artists we respect greatly.

    We don’t want to rest on our laurels, there may still be some glow to bask in, but we’re really excited about the new material we’ve been putting together and we can’t wait to share it with you. As a group, there’s a confidence and maturity to our sound that was refined during that first album-cycle.

    So with that context, we present: Caicedo Presents: Caicedo at The Six Below Midnight. We will be playing two 45-minute sets, one where we debut new songs from the next record and play a few off the first record for the first time, we’ll take a little break before we go back on and play all of our bangers. The idea is to put a show on for our friends, family, fans, and community. We want to play a bunch of songs you’ve never heard, we want to bring the sun and warmth to the middle of our wet Portland winters.
